Cooking Demos & Tutorials

As a tour excursion, cooking demonstrations can be a fun and interesting option.
For incentive, conference and specialist groups we can arrange these services both in house or at a variety of outside locations.

Option 1: Cooking Demonstration

Price $140pp, Min 10 – Max 20 pax

Perfect for partner programs and special interest groups. Our successful format is as follows:

Start Time : 10.00 a.m
Our Chef will guide you through a history of Bush Tucker as you sample a variety of native spices and fruits, explaining their tastes, origins, commercial and traditional uses e.g. quandongs, Lilly pilli, Kakadu plum, bush tomato, wattle seed. During this interactive tutorial you will be served coffee and lemon myrtle tea. We provide a bush food glossary and menu to keep and guests have an opportunity to purchase from our range of merchandise.

11.00 a.m
The chef will demonstrate preparing, cooking and presentation of three dishes that can be produced in the home.  The chef will cover some professional hints and answer questions.  Such dishes as Sugar cane prawn sticks, salt & pepperleaf crocodile and Wattle seed pavlova may be demonstrated. Guests join us in the kitchen for some fun and a learning experience. Recipes included.

12.00 p.m
Guests sit down to a three course lunch with a half bottle of wine included per person.  Generally the lunch is based on the food prepared during the demonstration so guests can enjoy what they have learnt.

Guests are presented with a gift of Ochre Dukka and are free to purchase further Red Ochre or Tropic Spirit products and depart, or stay on and enjoy the ambience and fine wines.

Option 2: Tutorial Luncheon

Wattle seed damper with dukka and peanut oil

Salt and native pepper leaf prawn and crocodile – lemon aspen sambal and Vietnamese pickles

Grilled lamb short loin – panzella salad – bush tomato and balsamic dressing and wild lime aioli

Wattle seed pavlova – Davidson plum sorbet and macadamia biscotti

STUDENT TUTORIAL 2024 – EXPERIENCE THE TASTE OF AUSTRALIA

Our experienced chef will guide you through the history of bush foods – taste up to a dozen wild berries and spices including – bush tomato, lemon myrtle, quandong, pepper leaf, and lemon aspen. Some nutritional properties and culinary uses will be explained. These Australian native foods have remained the property of the Australian Aboriginal people until being discovered by talented chefs only in the last 30 years – now everyone can enjoy them. Tasting notes and native Dukka gift included.
