At Ochre Restaurant, we celebrate native Australian ingredients, and the Ooray plum is one of our favourites. This striking rainforest fruit brings bold colour, vibrant acidity, and powerful nutritional benefits to
a wide range of dishes.
Where we source it
We use Ooray plum in a few different forms:
- Puree and powder from Buah Hutan (we’ve been using this for around two years).
- Whole fruit sourced from long-standing native suppliers such as Rainforest Heart and Creative Native, who have worked with this ingredient for decades.
What it tastes like
The Ooray plum has:
- A dark purple skin and bright red flesh
- Low sugar and high acidity
- A sharp, tangy flavour that’s rarely eaten fresh on its own
Instead, it shines when combined into jams, sauces, jellies, desserts, drinks, and savoury dishes.
How we use it in the kitchen
One of the easiest ways to work with Ooray plum is by boiling or steeping it into liquids to extract its colour and flavour. At Ochre, we infuse it into:
- Sugar syrups
- Stocks for sauces
- Wine reductions
- puree for cocktails
This method allows the fruit’s natural acidity and deep colour to enhance both sweet and savoury creations.
A truly unique native fruit
- Ooray plums grow directly on the trunks of rainforest trees, rather than on branches.
- Each fruit contains two seeds.
- It’s traditionally valued as an immune-boosting fruit, often taken by the spoonful when feeling unwell.
Nutritional benefits
Ooray plum is considered a native superfruit because it is:
- Extremely high in Vitamin C and E
- Rich in potassium and zinc
- Packed with antioxidants—even more than blueberries
It’s also widely used in skincare, where its high antioxidant content is believed to help:
- Promote cell turnover
- Fade pigmentation
- Boost collagen
