Twice cooked pork belly and seared Queensland scallops – Davidson plum jam and cauliflower puree
Tempura bugs on lemongrass – green papaya salad – sweet chilli lemon myrtle
Ricotta gnocchi – wild mushroom and truffle cream, lemon aspen salsa verde, pecorino
Prawn and avocado salad – sunrise lime and honey dressing, taro chips and fine herbs

Tuna duo – saku with ponzu and wakami, grilled with mango chilli aspen salsa
Lamb Rump, saltbush ash – potato gallette, beetroot sweet and sour, watercress
Morganbury beef tenderloin – white chocolate and cumin mash – heirloom vegetables and pepper berry jus
Roast chicken supreme – sundried tomato and cream cheese pocket, sweet potato dauphinoise, pea puree and prosciutto
