Twice cooked pork belly and seared Queensland scallops – Davidson plum jam and cauliflower puree
Ricotta gnocchi – tablelands mushrooms, truffle cream, salsa verde, pecorino
Tempura prawns – wasabi mayo, Vietnamese pickles
Salt and pepper quail – fresh chilli, compressed watermelon and finger lime

Main course

Crispy Skin Salmon – mango & wild lime salsa- noodle cake- steamed bok choi
Chicken breast – prosciutto wrapped, pocketed with bocconcini – smoked tomato and avocado
Braised beef cheek – bush tomato and coconut red curry sauce – spring onion rice cake
Lamb rump – Panzanella salad, wattle seed and smoked yoghurt dressing
